Ingredients

2 1/2 cups club soda, chilled
4 large limes, juiced
1/2 cup fresh mint leaves (approximately 1 bunch)
1/2 cup sugar
2 tablespoons white rum
2 limes, sliced into fine rounds

Directions

In a small bowl, combine the club soda and lime juice.

Add the mint leaves, sugar, rum and lime slices. Muddle the ingredients together until well mixed.

Pour the liquid into popsicle molds and add equal parts mint leaves and lime rounds from the mixture. Freeze for 1 1/2 hours and then insert popsicle sticks. Freeze for 10 hours.

To remove, dip the mold in warm water and gently pull on the sticks until the popsicle comes free.
