Ingredients

  • 2 jars (15 oz each) julienne-cut nopales in brine, rinsed, drained (about 4 cups) or 4 cups of cleaned, julienne-cut and cooked nopales
  • 1 medium onion, finely chopped (1/2 cup)
  • 3 plum (Roma) tomatoes, finely chopped
  • 1/4 cup finely chopped cilantro
  • 1/4 cup olive or vegetable oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chicken bouillon granules
  • 1 avocado, sliced, if desired
  • 1/2 cup Cotija-style cheese, crumbled

Directions

    In large bowl, toss nopales, onion, tomatoes and cilantro.
  • 2
    In small bowl, mix oil, vinegar, soy sauce, lime juice and bouillon granules. Add to nopales mixture; toss to mix. Top with avocado and cheese. Refrigerate any remaining salad.
