Orange Churros

Every January 1st, I await the invitation from my niece Gilda to taste her delicious churros, traditionally prepared for San Manuel’s Day. This is a custom that comes from Spain and it sparked my interest in creating my own version with a different and original flavor. I added a touch of orange that makes them a bit exotic. They are delicious, fried and crispy, soft on the inside with a nice crunch on the outside. You can make them in different shapes — some long and straight, others in the shape of a donut. They can be covered with brown sugar and cinnamon, caramel, chocolate or guava syrup, condensed milk or almost anything you like. They are irresistible! Churros are prepared in Latin America to accompany a hot chocolate, the traditional coffee with milk in the afternoon. I love them to make them at home for merienda, for my daughter’s snacks, and especially during vacations when my home is flooded with friends. Churros are easy to make, use only a few ingredients and are ready in a flash. Follow these steps and see!

Ingredients

  • 5 cups water
  • 5 cups flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon sugar
  • 1 teaspoon orange extract
  • 1/2 teaspoon grated orange peel
  • Vegetable oil

Glaze (if desired):

  • Brown sugar and cinnamon
  • Caramel (Dulce de leche)
  • Sweetened condensed milk
  • Chocolate syrup

    In medium saucepan, bring the water to a boil over high heat.

    Remove saucepan from stove, stir in all flour cups one by one. Beat vigorously, preferably with a wooden spoon. The mixture should be thick and lumpy. Add pinch of salt, sugar, orange extract and zest, stirring constantly.

    In a large skillet, place about 3/4 cup of vegetable oil and let heat thoroughly.

    In pastry bag (the kind used to decorate cakes or pies) with a wide tip if you do not have a churrera – a tool used for making churros. Fill it with the mixture. Over the boiling oil, gently push out strips of dough about 6 inches long into the oil. Fry 6 to 8 churros at a time; until golden, depending on the thickness.

    When ready, get the churros with tongs and set them on paper towels to soak up the excess oil. Sprinkle brown sugar with cinnamon or any of the other suggested toppings, such as caramel, chocolate syrup or condensed milk right away. Eat them immediately, if possible accompanied by hot chocolate or coffee.
