Over a plate, spread the olive oil over the chicken breasts and cover each side with herbes de Provence and sea salt.

Then place the onions, bell peppers, carrots, and whole potatoes inside a glass baking dish and lightly season with more herbes de Provence and salt. Next, arrange the chicken to sit amongst the vegetables along with the stems of fresh thyme and oregano.

Finally, pour the beer over the contents and cover with aluminum foil. Bake in the oven for 45 minutes at 450 degrees Fahrenheit. Afterward, remove the foil and continue baking for 15 minutes to let the chicken brown on top.
