Parmesan Fries

Crispy, cheesy, salty and no condiments needed…. That's what Parmesan fries are like! I could eat them anytime, anywhere. I especially love making them for my potato fry enthusiast, 4 year-old son, Max. First of all, the kid adores fries but when I tell him it's going to be parmesan fries, he goes batty for them. They are really easy to make and the addition of the parmesan makes them seem like a gourmet side dish when in reality, they are just simple french-fries with cheese on top. And come on, what doesn't taste better with cheese on it? A funny incident happened recently during dinner at a local greasy-spoon diner. We were all ordering our food (hamburgers and fries) and when it came time for Max to order, he said to the waitress "I want a cheeseburger and parmesan fries please. Please make sure they are parmesan fries. Thank you." She got such a tickle from him that when his order came to the table, the cook had spread some parmesan cheese over his little order of french-fries. Oh man did he love that! Since then I can't stop him from ordering them everywhere we go!

Ingredients

  • 6 potatoes
  • 1/2 tablespoon seasoning salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 2 cups vegetable oil
  • 4 tablespoon shredded parmesan cheese

Directions

    Peel and cut potatoes.

    In a pot filled halfway with hot water, place over a flame, and bring to a boil.

    Once water is boiling add in potato wedges, and boil for 10 minutes.

    Drain the water from the potatoes, then season the wedges with seasoning salt, garlic powder, and pepper.

    Place a large pan over a medium flame, add vegetable oil and allow to get hot.

    In batches cook the wedges on both sides until golden crisp. For about 10 minutes each side.

    Remove wedges for hot oil and drain on a paper towel lined plate for 2 to 3 minutes.

    Sprinkle parmesan cheese over the top. Enjoy!
