Peanut and Chocolate Covered Marshmallows

On hot summer days, we’ll do anything to avoid turning on the oven. This is why I’m always looking for alternative ways to cook equally delicious meals. Here is an easy idea for those days: these marshmallows covered in chocolate and peanuts. Kids will love helping you prepare them! These snacks only need a few minutes in the microwave and you can decorate them with sprinkles. Try them!

Ingredients

  • 40 large marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup crushed peanuts
  • 1 tablespoon palm oil chips (Paramount crystal)
  • 40 wooden sticks

Directions

    Place each marshmallow on a wooden stick.

    Add chocolate to a microwavable bowl. Heat in 4 increments of 30 seconds each, checking to make sure the chocolate doesn’t burn. As soon as it’s melted, add paramount crystal chips to soften and add shine to the chocolate.

    Dip each marshmallow half way into the chocolate, shake excess and roll in the crushed peanuts.

    Once ready, refrigerate for 5-10 minutes.

    Serve and enjoy!

    For a different flavor, use multicolored sprinkles or chocolate ones.

    Use white chocolate instead of semi-sweet chocolate.
