Pumpkins are one of the seasonal products that I most use in my kitchen to brighten my fall dishes, whether it’s for savory dishes or in the preparation of tasty desserts. One of these desserts is pumpkin cheesecake, which has a unique combination of flavors, soft texture and irresistible taste. Also, its cookie crust gives it a crunchy texture that will no doubt make it your family’s favorite dessert.

Ingredients

Ingredients for the crust:

  • 2 cups ground graham cracker crumbs
  • 1/3 cup soft, unsalted butter
  • 1/4 cup granulated sugar

For the cheesecake:

  • 3 packages (8 oz each) soft cream cheese
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 can (5 oz) evaporated milk
  • 2 tablespoons cornstarch
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

    For the crust : Preheat oven to 350°F.

    Combine the cookie crumbs, butter and granulated sugar in a medium bowl. Pour in round, 9-inch springform pan. Bake for 6 to 8 minutes, don’t let turn too dark. Let the crumbs cool on a wire rack for 10 minutes.

    For the cheesecake: In a large bowl place cream cheese, granulated sugar and brown sugar, mix with electric mixer until the mixture is soft and spongy. Stir in the eggs, the pumpkin and the evaporated milk. Then add the cornstarch, the cinnamon and the nutmeg. Blend well and pour over crust.

    Bake for 55 to 60 minutes (or until when you insert a toothpick or skewer the edges are golden brown and center is firm).

    Let cheesecake cool completely.

    If you wish, to add a topping by mixing the following ingredients: 1 container sour cream (16 oz), at room temperature 1/3 cup granulated sugar 1 teaspoon vanilla extract You may also add 2 tablespoons Amaretto.
