Today I want to share with you a different version of traditional mashed potatoes… pumpkin purée! The pumpkin can be roasted or boiled. If you have the time, I recommend roasting it to give the dish a unique and delicious flavor. Enjoy!

Ingredients

  • 2 lb pumpkin, peeled, seeded and coarsely chopped
  • 2 tablespoons olive oil
  • Coarse salt and ground pepper, to taste
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons pure maple syrup

Directions

    Preheat the oven to 400°F.

    Place the pumpkin on a baking dish. Sprinkle with olive oil and season with salt and pepper to taste. Bake until a knife passes through it easily, about 1 hour. Let cool a bit.

    Transfer to a food processor. Add the butter and syrup. Process until soft and smooth.

    Serve hot.

    To reduce cooking time, boil the pumpkin in a pot of water.
