Scrambled Tofu with Garbanzos and Cherry Tomatoes

Breakfast is the most important meal of the day. We hear this all the time because it's true. A balanced breakfast with sufficient protein and low in simple carbohydrates will keep your blood sugar levels stable throughout the day. In other words, you'll have more energy, be in a better mood and are less likely to give into spontaneous cravings. Sounds good, right? As a vegetarian, animal protein is completely eliminated from my breakfast. But this is no excuse to eat nothing but carbs as soon as I wake up. There are many wonderful sources of protein in the world of vegetables like legumes, quinoa and greens. This scrambled tofu with garbanzos and cherry tomatoes is the perfect example of good vegetable protein. Give it a try!

Ingredients

  • 2 teaspoons of coconut oil
  • 1/4 – 1/2 white onion in very thin strips
  • 1 cup of cherry tomatoes cut in half or in quarters
  • 1 package of organic tofu, firm, broken up manually
  • 1/2 cup cooked garbanzo beans
  • Salt and pepper to taste
  • 1/2 teaspoon of dry oregano
  • 1/2 teaspoon of powdered cumin
  • 1/4 teaspoon of cayenne pepper (or less, depending on how much you like spicy foods)
  • Steamed veggies and/or cooked quinoa (optional)

Directions

    Heat the coconut oil in a saucepan over medium heat.

    Add the onions and cook for 5 minutes (or until browned and tender, but not burnt), stir constantly.

    Add the tomatoes, tofu, garbanzos, salt, pepper, herbs and spices. Keep cooking, stir well until the tofu begins to brown a bit and the tomatoes are lightly cooked.

    Serve this scrambled tofu with steamed veggies or quinoa (optional).

Expert Tips

  • tip 1
    Firm tofu gives this dish a good texture, but any other kind of tofu works as well. If you use extra firm tofu you can cut it into small cubes.

    You can use any kind of vegetables or legumes to make this scrambled tofu or serve it as if it were plain scrambled eggs.
