I’m sure Dad will feel like a king on this day.

Ingredients

  • 4 (6 oz each) sea bass fillets, skinless and deboned
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 2 baking potatoes, thinly sliced
  • 1 medium white onion, sliced
  • 1 medium red onion, sliced
  • 3 crushed garlic cloves
  • 1 yellow lemon, sliced
  • 1 cup white wine
  • 1 teaspoon fresh or dried parsley

Directions

    Cut the fish fillet into 4 pieces, season with salt and pepper; refrigerate until you’re ready to cook it.

    Heat oven to 350°F.

    Grease the bottom of a rectangular baking pan (9” x 13”) with approximately a teaspoon of olive oil and use a cooking brush to spread it around the pan, to keep the potatoes from sticking to it. Another option for this step would be olive oil spray.

    Add the sliced potatoes and place the onions and garlic over them. Place the pieces of fish over the bed of potatoes and onions. Pour the remaining oil and parsley over the fish.

    Cover and seal the pan well with aluminum foil. Put it in the preheated oven for 45 minutes or until the potatoes and onions are tender.

    You may substitute salmon or red snapper for sea bass. You may also add vegetables, if you wish.

    Do not open the pan while it’s cooking, otherwise the steam will escape.
