Sparkling Pomegranate Gelatin

Sparkling gelatins presented in tiny molds add a touch of happiness to any meal. Kids of every age love to be presented with a jiggly treat topped with fresh whipped cream. For the holidays, I like to add a splash of bubbles to my gelatins to make them festive. I added ginger ale to give them a smidge of ginger flavor, but not too much so as not to overpower the pomegranate juice. Run them under warm water to unmold and don't forget the fresh whipped cream.

Ingredients

  • 3 tablespoons (3 envelopes) unflavored gelatin powder
  • 2 cups cold water
  • 1 cup sugar
  • 1 1/2 cups cold pomegranate juice
  • 1 1/2 cups ginger ale
  • Fresh whipped cream, to taste

Directions

    In a saucepan, add cold water and sprinkle the gelatin over the water; allow gelatin to absorb into water for 2 minutes.

    Bring to a boil over high heat and whisk until gelatin is fully dissolved. Remove from heat.

    To a large bowl, add sugar and pour gelatin mixture; whisk until all sugar dissolves. Whisk in pomegranate juice and ginger ale.

    Pour into 6 small molds or mold of choice.

    Refrigerate until completely firm.

    Unmold and serve with fresh whipped cream.
