Strawberry and Cream Parfaits

The one dessert that reminds me most of my childhood in the United States is the Strawberry Shortcake, a rich and creamy cake full of whipped cream and strawberries. Now that I am a mom, I enjoy preparing it for my kids, especially since they are so crazy about strawberries and cream. Since I can’t find the exact cake I used to have, I use vanilla panque, or pound cake. Sometimes I just serve the panque with strawberries and whipped cream right on top. But my kids’ favorite way to enjoy strawberry shortcake is in a parfait.

Ingredients

  • 4 cups of strawberries, washed and cut into slices
  • 1 cup of sugar
  • 1 teaspoon of ground cinnamon
  • 1 cup of heavy whipping cream
  • 1/4 cup of granulated sugar
  • 1/2 teaspoon of vanilla extract
  • 1 vanilla pound cake, cut into one inch squares

Directions

    Combine strawberries, cup of sugar and cinnamon in a medium sized bowl. Let them rest while you prepare the whipped cream. The strawberries will let off a sweet syrup or juice, which will be important for the parfaits.

    Pour the whipping cream and 1/4 cup of sugar in a large bowl and beat it with a hand blender at high speed for 5 to 10 minutes, or until the cream is thick and forms soft peaks. Add the vanilla extract, and mix it well.

    Constructing the parfaits: Drop a few pound cake cubes into the bottom of a glass. Cover the with some strawberries and syrup they left off, and then top them off with 1 or 2 tablespoons of whipped cream. Repeat with another layer of pound cake, strawberries and whipped cream.

    Running short on time? Use store bought whipped cream.

    If you can’t find vanilla pound cake, you can use a strawberry shortcake cake mix.
