Strawberry Mimosas

We live near strawberry fields, so fresh berries are available February through late May. One year, we took a tour of a strawberry farm, and when I got home with three flats of strawberries, I had to get creative! If you are going to spend an entire Sunday cooking and baking, you might as well start with brunch, right? These strawberry mimosas were created partly because I had to use up the strawberries I had on hand, but mostly because I love strawberries and champagne together. You’ll love their refreshing and sweet taste either for a delicious Valentine’s drink or anytime you want a fancy and simple drink. The best part? If you don’t have fresh berries you can substitute frozen ones and make this year round.

Ingredients

  • 3 to 4 strawberries
  • 4 oz champagne or sparkling wine
  • 3 oz white grape juice

Directions

    In blender, blend white grape juice and strawberries until smooth.

    Fill each champagne glass half way up with berry blend. Top with cold champagne.

    Using a long spoon, stir gently so you do not lose any champagne bubbles.

    You can use fresh or frozen strawberries. If using frozen, run under tap water for 1 to 2 minutes to thaw slightly.
