Sweet and Spicy Chicken Satay Skewers

Every time we visit my favorite Thai restaurant, there are these delicious chicken satay appetizers on the menu that I like to order. I love them so much that I decided to ask the waiter if it was possible to get the recipe from the chef. The chef took the time to come out of his busy kitchen to thank me for complimenting his cooking and to give me the recipe to the chicken satay and peanut sauce I wanted to make at home. Now, they are part of my party appetizer menu every time I have company over. They are easy to serve, easy to eat and delicious in every way.

Ingredients

For the chicken satay

  • 2 tablespoons fish sauce
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 2 tablespoons chipotle adobo sauce
  • 1 garlic clove, minced
  • 1 lb boneless chicken tenders

For the peanut sauce

  • 3 tablespoons peanut butter
  • 1/3 cup coconut milk
  • 2 teaspoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey

Directions

    For the chicken satay: In a medium bowl, combine fish sauce, lime juice, honey, soy sauce, chipotle chile, garlic and whisk until well mixed.

    Place chicken tenders in the bowl and marinate for 15 minutes. Heat grill pan or skillet on medium high. Pierce skewers through each chicken tender. Place chicken onto grill or pan and cook each side for approximately 3 minutes on each side or until well cooked.

    For the peanut sauce: In a small mixing bowl, combine peanut butter, coconut milk, fish sauce, lime juice, and honey. Whisk until well blended. Serve over chicken satay.

    Serve with fried tofu for a vegetarian option. The peanut sauce makes a great egg roll dipping sauce.
