The sweetness of sweet potatoes and the saltiness of black beans combine perfectly in this sweet potato and bean burrito dish. This is a good-for-you and delicious way of getting proteins if you’re trying to skip meat for a few days of the week or if you prefer vegetarian food. I like them because they’re super easy to make and of course, they’re simply delicious.

Ingredients

  • 1 (15 oz.) can sweet potato
  • 1 tablespoon coconut or olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon ground pepper or cayenne pepper
  • 1 (10.5 oz.) can black beans, rinsed and drained
  • 1/2 cup cooked brown rice
  • 4 large flour tortillas

Directions

    Rinse and drain the sweet potatoes, and dice into small pieces. Sauté the onion and garlic for 5 minutes over medium heat.

    Add the beans and sweet potatoes, and then mix.

    Lastly, add the rice.

    Warm up the flour tortillas and fill them up with two tablespoons full of the mixture.

    Fold the burritos and serve with guacamole or avocado.

    You can add corn, bell peppers or chopped avocado.
