Sweet Potato Stuffed Chicken Breast

This past weekend, I was looking for a simple and delicious dinner recipe. I decided to prepare sweet potato stuffed chicken breasts, and they were delicious. I love dishes that combine sweet and salty, and that’s exactly what happens when the sweet potato stuffing caramelizes inside these chicken breasts while in the oven. This is a simple recipe that you’ll find yourself making pretty often. To prepare it you’ll need 3 ingredients: chicken breasts, sweet potatoes, and onions. If you want, you can change the stuffing using your favorite ingredients. I hope you like this dish as much as I do.

Ingredients

  • 1 sweet potatoes, medium-sized
  • 3 tablespoons olive oil, extra virgin
  • 1 onion, chopped
  • Salt and pepper to taste
  • 4 chicken breasts, boneless and skinless

Directions

    Peel the sweet potato and dice it into 1/2” pieces.

    Add some oil into a big pan and add the onion and sweet potato. Add a teaspoon of salt and pepper. Stir the sweet potato and onion until everything’s golden brown.

    Using a knife, slice a deep pocket in each chicken breast. Stuff the chicken breasts with the sweet potato and onion mix.

    Brush the chicken with some oil and add salt and pepper to taste.

    Preheat the oven to 425°F. Place the chicken breasts onto an oiled baking tray. Bake the chicken breasts until they’re well cooked, for about 30 minutes.

    Set the chicken aside for 5 minutes before cutting and serving.
