Tamarind and Chipotle Sauce

If you’re tired of pairing the same-old sauces with your dishes, I have something new and different that you’re going to love? tamarind and chipotle chile sauce! This sauce is sour-sweet, spicy and super versatile. You can use it in tacos, tortilla chips, hamburgers and for dipping with french fries. It makes a great barbeque sauce with chicken or ribs, too.

Ingredients

  • 6 to 8 dried tamarinds
  • 3 cups water
  • 1/4 to 1/2 cup sugar
  • 4 to 6 chipotles in adobo sauce

Directions

    Remove the shell and skin from the tamarinds. Next, boil them in two cups of water over high heat for one minute.

    After the water boils, lower the heat and continue cooking for 10 to 15 minutes. Afterward, remove and let cool to room temperature. Manually remove the seeds from the cooked tamarinds.

    In a blender or food processor, blend the chipotle peppers in adobo sauce with the tamarinds and the cooled tamarind-water. Add the sugar, starting with only 1/4 cup until you reach the level of sweetness desired. If the sauce is too thick, the remaining cup of water can be added? little by little-until the sauce has the same texture as ketchup.
