Tortellini Marinara with Ancho Chili Pepper

Pasta is one of those simple dishes that can be prepared quickly and always satisfies the family, this is why you can always find different types of pastas and Italian sauces in my pantry. I prefer to cook pasta with tomato sauces like marinara because they allow me to add my own personal touch and are usually lighter than the creamy sauces. Tortellini pasta is the favorite among my kids, especially since it’s filled with cheese and we make it regularly. The following recipe is perfect for lunch and goes really well with a nice piece of garlic bread, but it’s also a great side for any meat at dinnertime. Bon appetit!

Ingredients

  • 1 packet (12 ozs) tortellini
  • 2 tablespoons olive oil
  • 1 garlic, finely chopped
  • 1/2 white onion, finely chopped
  • 1 can/bottle (14oz) of marinara sauce
  • 1 teaspoon powdered ancho chili pepper
  • Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, optional

Directions

    Cook the pasta according to the instructions on the package.

    While the pasta cooks, put a pot over medium heat and add the two tablespoons of olive oil, garlic and chopped onion. Stir until the onion becomes transparent. Add the sauce and chili powder; mix until all the ingredients are well integrated.

    When the pasta is ready, strain but don’t rinse. Empty the tortellini into the sauce, mix and add salt and pepper to taste.

    Serve immediately. Finish the dish with a little parmesan cheese and basil, if you like.

Expert Tips

  • tip 1
    If you’d like your dish a little spicy, you can substitute the ancho chili pepper for chipotle chili pepper.
  • tip 2
    Cooked pasta can be refrigerated. Make double the amount and you’ll have lunch and dinner for the next day.
