Truffles with Chocolate, Pumpkin and Orange Liqueur

They say that chocolate pairs wonderfully with orange. Let me add that introducing pumpkin into the mix makes for a perfect trio of sabores. And to prove my theory, I offer this exquisite chocolate truffle as evidence. Made with a touch of pumpkin purée and spices, and a drizzle of orange liqueur, these delectable truffles will have you in chocolate heaven. At home, these truffles have already passed through 'quality control', but if I'm not careful my family won't leave any for me to enjoy. Ingredients

  • 3.5 ozs whipping cream
  • 9 ozs semi-sweet chocolate, cut into pieces
  • 3.5 ozs pumpkin purée
  • 1 tablespoon orange liqueur
  • 1 teaspoon cocoa powder
  • 1 teaspoon powdered sugar

To coat the truffles (optional):

  • 1 cup melted chocolate for dipping or 2 tablespoons cocoa powder
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg

Directions

    In a small saucepan, heat the cream until it begins to boil.

    Remove from the flame and add the pieces of chocolate, stirring vigorously with a wooden spoon until it has completely melted.

    Mix in the pumpkin puree, orange liqueur, cocoa powder and powdered sugar, stirring continuously until all the ingredients are well blended.

    Let cool completely before forming the truffles—the mixture will be easier to handle.

    Make sure your hands are washed and well dried. Take small portions of the chocolate mixture and form balls

    If you'd like to coat the truffles with a chocolate shell, melt the chocolate in a bowl in the microwave. Melt slowly, gradually adding more chocolate until the desired texture is reached. Place a toothpick into a truffle to hold it securely, and dip into the chocolate. Let the truffles dry on waxed paper.

    If you prefer to roll your truffles in cocoa, first mix the cocoa powder with the ground cinnamon, ginger and nutmeg. Then gently roll each truffle in the powder and shake off any excess before storing or serving.

    Be careful to not leave the cream on the stove unattended, as it can easily boil over.

    Instead of the microwave, a more traditional way of melting chocolate is in a bain marie or double boiler. Place a metal bowl over a pot of simmering hot water. Add the chocolate slowly to the bowl and stir with a wooden spoon until completely melted.
