Ingredients

For meatballs:

  • 1 lb ground turkey
  • 1/2 medium onion, finely diced
  • 1 garlic clove, finely minced
  • 1 cup Bisquick™ Original baking mix
  • 1/4 cup milk
  • 1 cup cheddar cheese
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon cumin

For spicy pineapple glaze:

  • 1/2 cup diced pineapple
  • 1/2 cup pineapple juice
  • 1/2 whole jalapeño, sliced
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 garlic clove, minced

Directions

    For meatballs: Pre-heat oven to 350 °F. Spray a baking sheet with nonstick cooking spray; set aside.

    In a bowl combine all ingredients well. With wet hands, form small meatballs.

    Place on baking sheet and bake for 10 minutes, baste with spicy pineapple glaze and bake an additional 5 minutes.

    Remove from oven; baste with glaze again and serve warm.

    For spicy pineapple glaze: In a small sauce pan, whisk together all ingredients. Bring to a boil; boil for 5 minutes until sauce is slightly thick. Remove from heat and use to baste meatballs.

    Plan ahead: make meatballs, place on baking sheet, cover with plastic wrap and store in fridge up to 1 day.

    If you don't want them so spicy, remove jalapeño seeds.
