Precalienta el horno a 350°F. Engrasa sólo el fondo de un molde para hogaza de 8x4 pulgadas, con manteca; enharínalo ligeramente (o rocía el fondo del molde con spray para cocinar y enharínalo).

En un tazón o recipiente hondo grande, bate los huevos y el azúcar morena con la batidora eléctrica, a velocidad media, hasta tener una mezcla cremosa. Incorpora el aceite, la leche y la vainilla. A velocidad baja, incorpora la harina, el polvo de hornear, el jengibre y la sal, hasta tener una mezcla homogénea. Añade las zanahorias y las nueces. Extiende la mezcla en el molde.

Hornea de 50 a 60 minutos o hasta que al introducir un palillo en el centro, éste salga limpio. Enfría en el molde 10 minutos; retira del molde y enfría en una rejilla. Deja enfriar por completo, aproximadamente 2 horas.
