Para la butternut squash asada: Precalienta el horno a 425 °F. En una bandeja de hornear, mezcla la calabaza con 4 cucharadas de aceite de oliva y salvia, salpimiéntala. Asa por 20 minutos, hasta que esté suave y ligeramente dorada, voltéala a mitad del tiempo. Retira del horno. Baja la temperatura a 400 °F.

Lleva la sartén al horno y cocina por 15-20 minutos hasta que el huevo cuaje. Retira del horno, deja enfriar por 5 minutos, pasa un cuchillo por los bordes para despegarlos. Corta y sirve, y decora con hojitas de salvia.
