Sometimes all I need is 30 minutes to prepare a spectacular homemade dish. This spectacular vegetable pie is prepared with frozen or already-chopped veggies for a faster fix.

Ingredients

  • 1 pie plate, frozen, ready for use
  • 1/2 cup red bell pepper, ready to use and chopped
  • 1/2 cup frozen spinach, ready to use
  • 1 packet combined vegetables, frozen
  • 2 green onions, sliced, ready to use
  • 1 teaspoon dried oregano
  • 1/2 can pumpkin purée
  • 4 oz shredded mozzarella cheese
  • Sea salt and pepper to taste
  • Spices and dried herbs, to taste (optional)
  • 2 organic eggs
  • 3/4 cup whipping cream

Directions

    Preheat the oven to 350°F. Prepare the pie in a baking dish.

    Mix all the ingredients in a bowl, except the eggs and cream. Taste the mixture and season to your liking.

    Whip the eggs and cream in a different bowl and pour over the vegetables.

    Mix well and pour over the pie. Bake for 20 minutes or until cooked on top.

    Serve.

    If you're going to use frozen vegetables, thaw them over night in the fridge.

    If you're going to use fresh veggies, purchase them already diced.

    If you don't like cream, use coconut milk (a great option for those who like to avoid dairy).
