Morena Cuadra Fish is one of those ingredients that's healthy-eater friendly. If you cook it in the oven or steam it, it's very practical in helping maintain your figure. If you wish, you can fry this fish, but I suggest you cook it in the oven because, honestly, it's delicious. You can also steam it.

Ingredients

  • 2 white fish fillets (approximately 8 oz each)
  • Salt and pepper, to taste
  • 1/2 tablespoon lemon juice
  • 1/3 cup amaranth, cooked
  • 1 tablespoon olive oil
  • 1/2 cup onions, cut into thick julienne strips
  • 2 garlic cloves, minced
  • 1/2 cup red and yellow peppers, cut into thick julienne strips
  • 1 1/2 cups broccoli, cooked
  • 2 tablespoons soy sauce
  • 2 tablespoons chopped parsley
  • 2 parsley sprigs for garnish (optional)

Directions

    Preheat the oven to 350°F.

    Season the fish with salt, pepper and lemon juice. Cover with a thin layer of cooked amaranth, pressing down firmly so it doesn't come off, and place the fillets on a baking dish

    Bake for 10 minutes. Be careful, don't let your fillets overcook.

    In the meantime, heat the oil in a skillet over medium heat. Add the onions and garlic, and sauté for 2 minutes. Incorporate the peppers and, after 2 minutes, add the broccoli. Season with soy sauce, salt and pepper. Add 1 tablespoon of chopped parsley.

    Serve the vegetables on two plates. On the side, place the fish fillets in their juice. If you wish, garnish with a parsley sprig and serve immediately.

    To cook the amaranth, place 1/3 cup of the cereal in a small pot with 1 cup of water. Bring to a boil over medium heat. Lower the heat and stir occasionally, for about 20 minutes until tender.

    You can add the leftover amaranth to your breakfast cereal, or combine it with yogurt and fruit for a super energizing breakfast.

    If you don't have broccoli, you can substitute with lightly-cooked cauliflower.

    Don't like peppers? No worries. Just don't use them. You can add another vegetable of your choice, like peas or asparagus.

    Any fish will work for this recipe: sea bass, sole, salmon, trout. Go with your favorite.
