The name of these arepas says it all! Arepas rumberas are a true feast of flavors. The combination of the pork and cheese is perfect, a true delicacy! In Venezuela, arepas are usually sold at the arepera, a kind of restaurant that's open around the clock and specializes in the making of arepas. These eateries offer an infinite amount of fillings. Ingredients

  • 2 cups water
  • 1 teaspoon salt
  • 1 1/2 cup precooked white corn flour
  • 1 tablespoon corn oil
  • 2 tablespoons butter
  • 2 cups pulled or chopped pork meat
  • 2 cups Gouda or other yellow cheese

Directions

    In a medium size container, add water, salt and stir to dissolve. Add the flour a little at a time. Use your hands to mix, making circular movements and using your fingers to break up any lumps that may form.

    Let rest for 5 minutes so the dough can thicken.

    Add oil and knead with your hands until the dough is soft and holds its shape. Divide the dough into 6 equal portions, shape a ball and flatten it to create a saucer shape that's about 1/2-in thick.

    Heat up a nonstick frying pan on medium heat. Cook the arepas 5-7 minutes on each side or until golden and a little crunchy on the outside.

    Use a knife to slice open an arepa and spread a little butter on the inside. Fill with warm pork meat and cheese.

    Serve immediately.

    Make the arepa dough up to a day ahead of time and store it in the refrigerator. Remove from refrigerator 10 minutes before you will use it.
