Arepas Stuffed with Ham, Cheese and Eggs

These delicious fritters known as arepas are made with wheat flour. They are different from the Venezuelan and Colombian arepas, made with corn flour. These arepas are usually filled with seafood, steak or fried cod and are served for lunch or breakfast, as in the case of these ones that I filled with ham, cheese and eggs. These are one of my favorites because they remind me of my college years when I used to eat them all the time. Enjoy!

Ingredients

For the dough:

  • 2 cups all-purpose wheat flour
  • 1 package dry yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 tablespoons lard or shortening
  • 1/2 cup warm water
  • 1/2 cup oil

For the filling:

  • 4 fried eggs
  • 4 slices ham
  • 4 slices American cheese

Directions

    For the dough: Combine all dough ingredients in the bowl of your electric mixer and knead for 5-6 on medium speed with the dough hook. You can also do this process manually, although you may have to work a little harder until the dough is well combined and elastic.

    Refrigerate in a covered bowl for 1/2 hour.

    Shape the dough into small balls and stretch them out with a rolling pin, if you prefer the arepas to be thinner, or press with your hands for thicker arepas.

    Fry both sides in oil at medium-high temperature, they should be golden.
  • 5
    For the filling: Cut them open with the help of a knife and fill them with eggs, ham and cheese.

    Serve while they’re hot.
