Asparagus and Cheese Stuffed Bread

I believe a food’s presentation is as important as its taste. Not only is this asparagus cheese bread attractive and elegant, but also delicious. The filling is soft and creamy, and the outside is crispy. This spring, take advantage of asparagus season (one of my favorite vegetables) and make this wonderful dish. It’s the perfect recipe for vegetarians, but even the biggest meat lover will be very pleased. This stuffed bread is easier to make than it seems, and it’s the perfect party appetizer, so you can prepare it ahead of time. I guarantee both you and your guests will enjoy it. ¡Buen apetito!

Ingredients

  • 8 oz cream cheese, at room temperature
  • 1/2 cup shredded Monterey Jack cheese
  • 1 crushed garlic clove
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon chili powder
  • 20 cooked asparagus spears
  • 3 oz dried tomatoes
  • 1/2 cup red pepper, finely chopped
  • 2 tablespoons cilantro, finely chopped
  • 2 tablespoons parsley, finely chopped
  • Salt and pepper to taste
  • 1 long loaf bread (French or Italian)

Directions

    Beat cream cheese, Monterey Jack cheese, garlic, cumin powder and chili powder together with an electric mixer on medium speed, preventing lumps from forming.

    Cut asparagus spears and dried tomatoes into small cubes.

    In a medium bowl, combine asparagus and tomatoes with the pepper, cilantro and parsley. Season with salt and pepper to taste.

    Use a spoon to stir the cheese and vegetable mixtures together.

    Cut off both ends of the bread and use a spoon to hollow out as much as possible.

    Stuff the bread with the cheese and vegetable mixture. Wrap it in plastic wrap, and let it cool in the refrigerator for at least 30 minutes.

    Use a serrated knife to slice it prior to serving.
