Baked Peppers Stuffed with Eggs

A wholesome breakfast is very important, especially during the week when we don't have very much time. These baked stuffed peppers with egg are a delicious way to say, "Good morning!"

Ingredients

  • 4 small red peppers, cut in half and seedless
  • 6 ozs bacon, chopped
  • 1 cup onion, chopped
  • 3 garlic cloves, chopped
  • 2 cups Portobello mushrooms, diced
  • 8 eggs
  • Salt and pepper, to taste
  • Fresh chopped tomato, diced avocado and fresh cilantro for garnish

    Preheat the oven to 350° F.

    Place the pepper halves on a baking tray and bake for 20 minutes.

    In the meantime, brown the bacon and onion in a pan over medium-high heat, until the onion begins to soften and the bacon is crispy. Add the chopped garlic and mushrooms, and cook until the mushrooms are well cooked.

    Take the peppers out of the oven and stuff each half with a large tablespoon of the bacon preparation. Add a raw egg and season with salt and pepper.

    Cover the peppers with aluminum foil and bake for 20-30 minutes, or until the yolks are cooked.

    Garnish with the tomatoes, avocado and fresh cilantro. Serve immediately.

    You can use Poblano chiles instead of peppers if you prefer a spicy kick to your breakfast.
