It’s surprising how many different varieties of potatoes there are! These potatoes with bacon and cheese are perfect for a cookout. The great thing about this dish is that you can prepare it ahead of time and simply reheat it when you need it. The top layer will become crunchier and the center will still be soft. You can adjust the amount of cheese and bacon to suit your personal taste.

Ingredients

  • 6 unpeeled potatoes, washed and cut in half
  • 6 slices of turkey or pork bacon, chopped
  • 1/2 cup grated cheddar cheese
  • Salt and pepper, to taste
  • Fresh cilantro, chopped

Directions

    Boil the potatoes for about 10 minutes or until they are a little bit soft.

    In a large frying pan, brown the bacon. Don’t make it too crispy.
  • 3
    Remove bacon from pan. Place the potatoes over aluminum foil. Sprinkle with cheese and bacon. Season with salt and pepper to taste.

    Place potatoes on oven rack and bake until the cheese melts. Top with chopped cilantro and serve.

    For a vegetarian version, use mushrooms instead of bacon.
