Ingredients

  • 2 big sweet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon dry oregano
  • Salt and pepper to taste
  • 1/3 cup tomato sauce
  • 1 cup cherry tomatoes
  • Mozzarella cheese in chunks
  • Fresh basil leaves

Directions

    Preheat the oven to 400°F.
  • 2
    Peel and grate the sweet potatoes using the thick side of the grater. Combine with 1 tablespoon of olive oil, oregano, salt, and pepper.

    Press into a 30 cm pizza sheet. Bake for 25 to 30 minutes or until the sweet potatoes are cooked in the center and the edges are golden.

    Take out of the oven and spread some tomato sauce on the crust. Place the cherry tomatoes cut in halves, the mozzarella chunks, and the basil leaves. Sprinkle with salt and drizzle with olive oil.

    Bake until the cheese is melted, for an additional 4 minutes.

    Cut into slices and serve immediately.
