Did you know that if you marinate chicken wings in coffee before baking them, you’ll get a new and delicious flavor? If you don’t believe it, you must try this recipe. This type of seasoning, called rub, is used when making meat – like barbecues – and it’s perfect if you love coffee. Coffee gives the chicken wings an intense, mysterious, smoked and earthy flavor, so it’s great if you want to surprise your foodie friends or family with a different and original dish.

Ingredients

  • 1 tablespoon ground espresso coffee
  • 1 teaspoon sweet paprika
  • 2 tablespoons dark brown sugar
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon dry oregano
  • 1 teaspoon fresh thyme or 1/4 teaspoon dry thyme (optional)
  • 2 tablespoons white wine vinegar
  • 2 lbs. chicken wings

Directions

    In a small bowl, mix the coffee, paprika, brown sugar, salt, cayenne pepper, oregano, thyme and wine vinegar until you get a dark and aromatic paste.

    Pour over the chicken wings and rub well with your hands until they’re completely coated in the mix. Cover with plastic wrap and put in the fridge for at least one hour but for a maximum of two hours.

    Preheat the oven to 375° F. Line a baking dish with parchment paper or aluminum foil.

    Put the wings in only one layer and bake for 30 minutes. Turn them around and continue baking for another 15 minutes.

    Serve immediately with lemon wedges and a salad.

Expert Tips

  • tip 1
    If you don’t like paprika, use chili powder instead. But, if you do this, omit the cayenne pepper.

    Use honey instead of brown sugar.
