When summer storms hit, like they often do where I live, there is nothing like a chilled soup to warm your soul while cooling your insides. In this chilled carrot ginger soup recipe, the ginger gives the sweet sautéed carrots a distinct kick of flavor. Ingredients

  • 4 cups vegetable broth, low sodium preferred
  • 2 tablespoons olive oil
  • 1 Spanish onion, chopped
  • 3-4 cloves garlic, chopped
  • 2 teaspoons ginger, freshly grated
  • 1 1/2 pound carrots, chopped
  • 1 teaspoon orange juice, plus zest
  • Salt and pepper, to taste

Directions

    In a saucepan, drizzle olive oil and sauté onions on medium low heat until translucent. Add garlic and cook, making sure not to burn, for 2-3 minutes. Add carrots and ginger, caramelizing slightly.

    Stir in the vegetable broth and bring to a boil. Reduce heat and add orange juice, plus zest. Taste the carrot mixture and add salt and pepper as desired.

    Remove from heat and allow to cool. In batches if necessary, carefully puree everything in blender. Refrigerate and serve when cooled.
