Sometimes, we need a break. Some people like to go shopping. Others like to pamper themselves at the spa. A few of my friends like to go to yoga and stretch their stress away while others like to lounge in front of the television set and watch mindless programming. I like to bake. I like to bake chocolate cakes, to be exact. The measuring along with the decadent chocolate smell that permeates my entire home is a great stress reliever. I like to incorporate fun ingredients like the flavorful stout beer I included in this recipe and enjoy a rich slice with my husband at my side and a piping hot cup of strong dark coffee. Here’s an ordinary cake that is out of the ordinary. I guarantee your family will love it and will be extremely surprised that the secret ingredient that makes this cake extraordinary are the flavors of a rich dark beer. Enjoy!

Ingredients

  • 1 cup stout beer
  • 1 cup unsalted butter
  • 3/4 cups cocoa powder
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1/2 tablespoon baking soda
  • 3/4 teaspoons salt
  • 2 large eggs
  • 2/3 cups sour cream

Icing:

  • 1 cup whipping cream
  • 1/2 lb bittersweet melting chocolate, chopped

Directions

    Preheat oven to 350°F.

    Butter (or spray with non-stick cooking spray) one large 9-inch bundt cake mold. In a medium saucepan, heat stout and butter to a slow simmer until the butter has melted. Add cocoa powder and whisk until ingredients have combined.

    In a large bowl, whisk flour, sugar, baking soda and salt. Set aside.

    In a separate large bowl, beat eggs and sour cream until smooth. Add cocoa/stout mixture and continue to beat to combine. Add flour mixture and beat to combine until smooth.

    Pour mixture in prepared bundt pan and bake for 35 to 45 minutes until a toothpick inserted comes out clean.

    Cool in pan for 30 minutes.

    For icing: In a medium saucepan, heat cream to simmer. Remove from heat and add chopped chocolate. Whisk until chocolate has melted and consistency is smooth. Refrigerate for 1 hour until icing is spreadable.
