Quick and easy recipes don't have to be bland or unhealthy. With a busy family to feed, I'm always looking for those types of dinner recipes. This creamy butternut squash pasta recipe fills my kids up, is inexpensive and can be made ahead or frozen for later.

Ingredients

  • 1-2 tablespoons olive oil
  • 1/2 onion, chopped (about 1 cup)
  • 1 butternut squash, peeled and diced into cubes (about 4 cups)
  • 2-3 garlic cloves, minced
  • 2 cups chicken stock
  • 1 bay leaf
  • 1/8 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 lb pasta
  • 1/4 cup parmesan cheese
  • 1/4 cup whole milk

Directions

    In a pan on medium-low heat, add olive oil and sauté chopped onion until browned. Add squash and garlic, and cook for another few minutes. Pour in chicken stock and bay leaf, nutmeg, salt, and pepper. Cook until the squash is tender.

    Meanwhile, cook pasta according to package instructions.

    Remove bay leaf and, using a hand mixer, purée preparation until completely smooth. Stir in cheese and milk. Toss in cooked pasta and serve immediately.
