Flambéed Bananas with Flowers

In the cooking classes that I teach to children and adults, I always emphasize how exciting it is to try new flavors and textures. The culinary world is fantastic, and eating is one of the greatest pleasures in life. Some years ago, I had a wonderful experience in a cuisine festival in my country of origin (Venezuela). One of the guest chefs in the festival presented delicious and original dishes, in which he combined his creations with an amazing variety of edible flowers. Inspired by this wonderful experience, I have created different dishes with a touch of flowers to add color, texture and glamour. One of my favorite desserts is flambéed bananas, which are easy to prepare and great for any occasion. The bananas are drenched in Grand Marnier liqueur, flambéed and covered with creamy caramel. They are then garnished with small flowers creating a unique harmony of flavors and colors. Create a flower garden on your table for dessert!

Ingredients

  • 2 bananas
  • 4 tablespoons butter
  • 1/2 cup brown sugar
  • 1 tablespoon honey
  • 1/2 tablespoon orange zest
  • 1/3 cup cream
  • 1 glass Grand Marnier
  • 1/4 cup slightly toasted sliced almonds
  • Edible flowers
  • Vanilla ice cream (optional)

Directions

    Put butter, sugar and honey on a skillet at medium heat. Let everything melt for about 2 minutes until it forms a light-colored caramel.

    Add orange zest and cream. Lower the heat and let it thicken stirring constantly for 3 more minutes.

    Cut the bananas lengthwise in half and place them on the thickened caramel. Move the skillet by the handle to drench the bananas in caramel using a wooden spoon. Let them cook for some minutes turning them over when necessary so they cook evenly on both sides, about 1/2 minute each side.

    Remove from heat and add the glass of Grand Marnier. Light it with a match or lighter and move the skillet constantly by the handle until the liqueur is burned and the flame perishes.

    Using a spatula, transfer the bananas to a plate, cover them with caramel, sprinkle toasted almonds and garnish with flowers.

    If you wish a more tempting dessert, add a scoop of vanilla ice cream.

Expert Tips

    You can replace the orange zest with lemon zest.

    You can replace the Grand Marnier with rum.

    Cook at low heat when adding the cream to avoid spilling and burning.
