The summer produce is so beautiful and varied, that hardly any recipe is needed to create innumerable flavorful dishes with it. Looking at everything that is available in the market is enough inspiration. But even if your range of dishes is limited, fruits and vegetables are so aromatic and tasty at this time of the year, that you can cook them in the simplest ways and still get many delicious meals out of them. The simplest way to use them, especially when they are over ripe and you don't know what to do with them before they go bad, is to turn them into a juice or smoothie. So keep at least one fruit juice or smoothie recipe that you like in hand for those times of need. This frozen strawberry, mango, and papaya juice is one of my personal favorites, probably because they remind me of all the frozen fruit juices I drank in Lima during the summers.

Ingredients

  • 1 very ripe mango
  • 1 cup ripe strawberries
  • 1 cup ripe papaya
  • 1-2 cups water

Directions

  • 1
Wash and peel the mango. Slice it.
  • 2
    Slice the strawberries and papaya.
  • 3
Place all the fruit in a dish, making one layer, and freeze for close to an hour, or longer.
  • 4
Put all the frozen fruit in a blender with 1 cup water, and process until creamy. If you don't want it too thick, add a little more water. Serve.

Expert Tips

  • tip 1
This frozen drink is great to drink with a straw (that way you won't freeze your lips while drinking it!).
  • tip 2
You can use almond milk instead of water for a different effect, or add a shot of your favorite alcoholic drink to turn it into a party drink.
