Ingredients

  • 3 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 3/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 medium head cauliflower (2 lb), broken into florets, thinly sliced (about 6 cups)
  • 2 cups shredded green cabbage
  • 1/2 cup sliced red onion, rinsed under cold water and drained
  • 1 green apple, julienned
  • 1/2 cup chopped toasted walnuts
  • 1/2 cup dried cranberries

Directions

    In large bowl, beat lemon juice, mustard and salt with whisk. Slowly beat in olive oil, then thyme.

    Add cauliflower, cabbage, red onion and apple; toss to coat. Stir in walnuts and cranberries; toss to combine. Cover and refrigerate 30 minutes before serving.

    To toast walnuts, heat oven to 350ºF. Bake uncovered in ungreased shallow pan about 10 minutes, stirring occasionally, until golden brown.
