Gratin Potatoes in White Sauce

Chilean Christmas dinner generally consists of turkey stuffed with duchess, but this year I’ve decided to create a dish that’s worthy of being served with the turkey. These potatoes in white sauce are the perfect solution. It’s incredible how soft and creamy they are and the touch of nutmeg compliments the spices of the turkey wonderfully This dish is definitely here to stay as part of my Christmas dinner menu!

Ingredients

  • 2 lb. yellow potatoes
  • 3 tablespoons flour
  • 2 tablespoons butter
  • 3 cups half and half
  • 4 tablespoons coarsely grated Parmesan cheese
  • 1 teaspoon salt
  • Pepper and nutmeg

Directions

    Peal and cut the potatoes into 1/4 inch wheels. Add enough water to a pot to cover them completely. Add a generous pinch of salt. Cook over high heat with the lid on. Watch for it to boil and when it does, lower the heat to medium and let boil for 12 minutes.

    In the meantime, prepare the white sauce. Melt the butter in a medium pot, add the flour and cook for 1 minute while stirring with a round whisk. Add the warm half & half little by little while stirring constantly. Create a past with no lumps and keep adding the half & half. You’ll end up with a cream, keep stirring and raise the heat to medium high. Wait until it boils and cook for 1 minute more. Season with salt, nutmeg and pepper.

    Preheat the oven to 350°F.

    Drain the potatoes and carefully add them to a pre-greased baking dish. Cover in the white sauce and sprinkle on some parmesan cheese.

    Bake for 15 minutes or until its browned and bubbly.

    Serve hot.

    You can add chives or golden onion. You could also add an herb like rosemary or sage.

    You can prepare it a day in advance and refrigerate it. Bake just before serving (it will take a little longer).
