Ham with Orange-Chipotle Sauce

Ham is a festive dish, par excellence. It’s so versatile that is can be combined with any number of flavors, glazes or sauces. Today’s recipe perfectly brings together the spice of chipotle chili pepper with the sweetness and citrus aroma of fresh-squeezed orange juice. Fortunately, pre-cooked, smoked ham is readily available in grocery stores and supermarkets, saving you lots of time in the kitchen. Basically, the ham is baked to thoroughly heat and marinate it in this beautiful sauce. I prefer spiral ham, bone-in, not only because it looks beautiful on the table, but also because it’s already sliced, which will save you even more time when it comes to serving and setting the table. Ingredients

  • 1 (7-8 lb) pre-cooked spiral ham
  • 4 oranges
  • 1 lemon
  • 3 cloves
  • 2 (whole) chipotle chili peppers
  • 1 tablespoon chipotle adobo sauce
  • 3/4 cup orange marmalade
  • 3/4 cup brown sugar
  • 1 pinch salt
  • 3 tablespoons orange liquor (optional)

Directions

    Preheat the oven to 350°F.

    Set the ham in an oven-proof baking pan and add 1/2 cup of water to the bottom of the dish. Cover with aluminum foil and bake for 1 hour.

    Squeeze the oranges and lemon. Mix the juices with the cloves, chipotle, adobo sauce, marmalade, brown sugar and salt, and bring to a boil over high heat.

    Reduce heat to medium and let the sauce reduce for 30 minutes. Add the orange liquor (optional) and let boil an additional 5 minutes. Strain.

    Remove the ham from the oven and drizzle with 1 cup of the orange-chipotle sauce. Cover with the aluminum foil and return to the oven, increasing the temperature to 400°F. Let cook for an additional 50 minutes or so (the baking time is 15 minutes per pound; adjust accordingly), basting the ham every 10-15 minutes with the sauce and drippings from the bottom of the pan.

    Meanwhile, heat the remaining orange-chipotle sauce over medium-high heat and boil until it has reduced down halfway and thickened slightly.

    When the ham is ready, let rest for 5 minutes, remove from the cooking pan, set on a serving tray and drizzle with remaining sauce.

    For a less spicy version of this ham, remove the chipotle chili pepper seeds or use only 1 pepper. If your family really likes chipotle, add an addition chili pepper.
