Ingredients

  • Non-stick cooking spray
  • 6 corn tortillas
  • 1/2 cup sour cream
  • 1 tablespoon chipotle peppers in adobo sauce, finely minced
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups cooked, shredded chicken
  • Cilantro, to taste

Directions

    Preheat the oven to 350 °F.

    Cut tortillas with a cookie cutter into small rounds, arranging them on a baking sheet that has been sprayed with cooking spray. Bake until crisp, about 10 minutes.

    In a small bowl whisk together the sour cream, chipotle peppers, fresh lime juice, salt and pepper.

    Top warm tostadas with the shredded chicken, drizzle with the chipotle sauce mix and top with fresh cilantro.
