Honey-Mustard Glazed Arctic Char

One of my favorite foods to prepare during Lent and Easter is fish. At the beginning of each year, I start searching for new fish recipes in order to be prepared for the season. I remember that when I was little we would frequently eat tuna or grouper, but ever since I've lived in the U.S. I've really come to appreciate salmon and the different varieties of trout. Arctic char is similar to trout, but this fish thrives in extra-cold temperatures farther north than where trout is typically found. Preparing fish isn't difficult at all; you only need to season well and dress with a salsa or accompaniment. I prefer to bake a fillet since it’s quick and simple. As the fish is cooking, I can spend my time preparing the rest of the meal. This recipe for arctic char glazed with honey and mustard is a light dish for lunch or dinner, and offers a flavorful and satisfying meal.

Ingredients

  • 1 lb arctic char fillet with skin, approximately 1 1/2 inch thick
  • 2 tablespoons spicy brown mustard
  • 2 tablespoons honey
  • 1 teaspoon dried tarragon
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Directions

    Wash the fish and dry with a paper towel.

    Cut the fillet in half or into four, as preferred.

    Season to taste with salt and pepper and set aside.

    In a small bowl, combine the mustard, honey, tarragon and garlic powder.

    Pour the mustard sauce over fillets. Cover and let marinate for 15 minutes.

    Preheat the oven to 400°F.

    Bake the fish for 20-24 minutes or until it separates easily with a fork.

    Serve over a bed of rice and with a side of vegetables.

    Always try to buy the fish with the skin. Later, when you bake or broil you'll see just how easily it separates, making it much easier to serve.
