Ingredients

For the salad:

  • 2 cups Israeli couscous pearls
  • 1 tablespoon olive oil
  • 4 cups hot vegetable broth
  • Salt to taste
  • 4 cups (small) tender kale leaves
  • 1/2 cup dried cranberries

For the dressing:

  • 1 cup rice vinegar
  • 2 teaspoons mustard
  • 1 teaspoon honey
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1/2 cup olive oil

Directions

  •
    1
The couscous should be prepared first, as it takes at least 30 minutes to cook.
  •
    2
In a large saucepan, lightly fry the couscous in olive oil until it has turned golden in color.
  •
    3
Pour the hot vegetable broth on top and add a pinch of salt. Turn off the heat and cover.
  •
    4
When all the liquid has been absorbed, lightly fluff the couscous with a fork and set aside.
  •
    5
To serve, place a small bed of tender kale leaves on a plate and add one or two large spoons of couscous on top. Garnish with dried cranberries and dress with a bit of vinaigrette—this can be enjoyed as a starter course or as a side dish for main courses like turkey or roast chicken.
  •
    6
To make the salad dressing, mix the above ingredients together in a bowl in the order they are listed. Stir with a fork until the sauce is well blended.
  •
    7
If you want to serve this salad buffet-style, use a large salad bowl and follow the same steps as listed above. In this case, the salad dressing should be set aside in a glass bottle or gravy dish, so guests can dress their salad to taste.
