Lechón pork empanadas are really easy to make if you have any leftover roasted pork. Toss in onion, some yellow pepper, golden raisins, and chopped meat. You can just use this recipe as inspiration for a variety of empanadas, which are always delicious. You don’t need to work hard to make the dough; you can just buy it at the supermarket. You can also use pie crust, or you can just spend some time preparing this delicious dough, and once it’s ready, you can freeze it and use some every time you want a delicious pork empanada or any other type of empanada.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 1 teaspoon chopped yellow pepper (optional)
  • 2 cups roasted lechón pork, chopped
  • 2 tablespoons golden raisins
  • 1 tablespoon Hoisin sauce
  • 1 teaspoon soy sauce (optional)
  • Salt and pepper
  • 10 slices of dough for empanadas
  • 1 egg, separated into egg white and yolk
  • 2 tablespoons milk
  • 1 tablespoon powdered sugar

Directions

    Heat the vegetable oil in a pan over medium heat and fry the onion and yellow pepper, stirring constantly until soft and golden brown.

    Add the chopped roasted lechón pork and stir well. Add the raisins, Hoisin sauce, soy sauce and 1/4 cup water. Let it boil and cook for a few minutes until almost all the water has evaporated, but without it being dry. Season with salt and pepper if necessary. Turn down the heat and set aside until cold.

    Preheat the oven to 350 °F.

    Put a tablespoon of filling on each circle of dough.

    Dip your fingertip in the egg white and rub it on the dough to close the empanada and seal it well. Place the empanadas on a baking tray.

    Mix the yolk with the egg white and use this to brush each empanada. Bake for 20 – 30 minutes or until golden brown.

    Remove from the oven, let them cool down for a few minutes over grills and sprinkle some powder sugar on them using a strainer.

    Serve immediately.
