Valentine's Day, the international day of love, is drawing near. Today I want to share with you a helpful idea that makes for a tasty Valentine's Day breakfast or afterschool snack for your kids. Pancake mix is easy to use to whip up a variety of different pancake-based goodies. This time, my pancakes have taken on the form of a muffin, to which I've added fresh strawberries and Lucky Charms™. Let your kids help with this family breakfast recipe and you'll see how much they enjoy being a part of the preparation process. These baked pancakes, in addition to being a super fun option, are sure to be a hit with everyone in the family.

Ingredients

  • 2 1/2 cups Bisquick™ Original pancake and baking mix
  • 3/4 cup milk
  • 2 eggs
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped strawberries
  • 1/2 cup Chocolate Lucky Charms™ Cereal

Directions

    Preheat the oven to 350°F. Spray muffin or cupcake pans with non-stick cooking spray or line pan with individual liners.

    Combine the pancake mix with the milk, eggs, sugar and vanilla extract, stirring together until smooth. Pour batter into the pan, filling each muffin 2/3 full. Add chopped strawberries and cereal to the top of each muffin.

    Bake for 14-15 minutes, or until toothpick inserted in the center of muffin comes out clean.
