Candy corn is one of the most popular Halloween treats, and can be used to decorate mini cupcakes. Everyone will love these tasty cupcakes so be sure to make plenty. These cupcakes can be made in no time using Betty Crocker™ cake mix.

Ingredients

  • box Betty Crocker™ Super Moist™ Butter Recipe Yellow Cake Mix

Frosting

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar

Decorations

  • Sprinkles, as desired
  • Candy corn, as desired

Directions

    Make cake batter as directed on box. Spoon 2/3 batter into each mini cupcake/muffin pan.

    Bake 9-14 minutes or until a toothpick inserted comes out clean. Frost with frosting and decorate with sprinkle and candy corn.

    Beat cream cheese, butter and vanilla with a mixer until light, fluffy and well blended.

    Gradually add sugar, beating until well blended after each addition. Beat until light and fluffy, use to frost cupcakes.

    To make a candy corn frosting, pulverize 1/4 cup sugar and 1 cup of candy corn in a food processor, fold into cream cheese frosting and use to frost cupcakes.
