When the holiday season approaches, I am filled with a sense of nostalgia; partly because I have my family away and partly because it reminds me of how happy I was as a child during this time of year. One of the things I remember most is when all the women and girls would gather in the kitchen to prepare dinner while we talked and laughed. The kitchen has always been the gathering place for my family, and the food has always been a way of expressing our love. There are several recipes that make me feel as if I was back in my childhood days, and one of them is the one I share with you today. Mustard chicken is a dish that my mom made on a regular basis and one that has been with us for many years for our Christmas dinner. The beauty of this recipe is that it’s very easy to prepare and it’s so delicious that you will surely go back for seconds.

Ingredients

  • 4 chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet Dijon mustard
  • 1 tablespoon rice vinegar
  • 1 teaspoon oregano
  • 1 medium white onion

Directions

    Clean, wash and dry the chicken breasts, and then generously season them on both sides with salt and pepper.

    Preheat oven to 350°F.

    In a large skillet, place butter and olive oil. Once it’s hot, carefully place the chicken breasts one by one and cook for 5 minutes on each side, so they change from pink to white. While cooking, take a small bowl and mix the two mustards, rice vinegar and oregano and set aside. Chop the onion.

    Place the chicken on a platter. Place the onion in the pan where you cooked the chicken; if necessary, you can add a tablespoon or two of water to prevent sticking to the pan. Cook until tender-crisp. Place the onions and mustard mixture over the chicken. Cover the tray with aluminum foil and bake for about 25-30 minutes depending on the size of the meat and the type of oven you have.

    Remove the foil and let bake for another 15 minutes uncovered.

    Remove from oven and check mustard sauce. If too watery, you can place it in a pan and reduce or add a tablespoon of flour dissolved in 1/8 cup water to thicken.

    Serve a slice of brisket and top with the mustard sauce. Accompany this dish with fries and salad.
