No Bake Strawberry Oatmeal Cookies

As a mom of a young child I am always on the go. There are times when my son wants a batch of home-made cookies but I don’t have the time to bake up a dozen, or the heat is too unbearable to turn on the oven. In those instances I like to turn to my trusty no bake strawberry oatmeal cookies. This simple recipe can be whipped up in a matter of minutes and placed in your kids’ hands before you know it.

Ingredients

  • 1 cup sugar
  • 4 tablespoons butter
  • 1/4 cup milk
  • 2 cups oatmeal (quick)
  • 4 strawberries (cut into 3 slices)

Directions

    In a Dutch oven over a medium flame combine sugar, butter, and milk.

    Stirring constantly bring mixture to a boil. Allow to boil for 3 to 4 minutes.

    Remove from flame and mix in oatmeal to combine completely.

    Drop mixture by heaping teaspoon onto a sheet of parchment paper.

    Place a strawberry slice on top of oatmeal drop and press down to flatten. You may need to shape with your fingers to create a perfect circle.

    Allow cookies to cool until firm for about 30 minutes.
