Ingredients

  • 3 cups sweet potatoes, 1/2”, peeled and diced
  • 1 (11 oz) can corn, drained
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • Pepper to taste

Directions

    Preheat the oven to 425°F.

    Mix the peeled sweet potatoes, corn, salt, oil and pepper until everything is mixed well.

    Bake for 15 minutes or until the sweet potatoes are cooked. You’ll know they’re ready when you can easily pierce them with a fork.

    Serve immediately.
