Pasta Salad with Ham and Veggies

Easter Sunday is just days away, and no doubt you’re already thinking about what you’re going to serve your family in celebration. This cold pasta salad is perfect for home or to bring with you wherever it is you end up going with your family. I prepared and served it with balsamic vinaigrette to give it a sweet and sour touch, but if you want, you can use yogurt or mayonnaise!

Ingredients

  • 4 cups rotini pasta (spiral)
  • 3/4 cup olive oil, plus additional oil to drizzle over pasta
  • 1 cup frozen corn
  • 1 cup frozen sweet peas
  • 1 cup cherry tomatoes
  • 1 cup yellow tomatoes
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon sugar (optional)
  • Salt and pepper, to taste
  • 1 cup cooked ham
  • 1 cup Gouda or cheddar cheese
  • 1/2 cup sliced black olives

Directions

    Cook the pasta according to package instructions. Drain and set in cold water to stop the cooking process. Once chilled, drain, drizzle with olive oil, and stir to coat the noodles and prevent them from sticking together.

    Cook the corn and sweet peas in the microwave for 1 minute. Let cool before mixing with the pasta.

    Prepare the vinaigrette by mixing the olive oil, balsamic vinegar and sugar, and add it to the pasta and veggie mix. Stir with a spoon or spatula and season with salt and pepper, to taste.

    Cut the ham, tomatoes, cheese and olives, and incorporate in the salad. Keep chilled in the refrigerator until ready to serve.

    You can also serve this salad warm; simply omit the cheese, adding it to the dish before bringing it to the table so it doesn’t melt completely.

    Try substituting the vinaigrette for a cheese sauce, if you wish.
