Mojo is a garlic and bitter orange sauce that’s popular in Cuban cuisine. Pork sandwich with mojo might just become one of your favorite dishes; so flavorful, it’s juicy, delicious and everyone will love it! I prepared a roast pork loin for this recipe, but you could also make swap out the loin for leftover pork from your Christmas and New Year’s celebration. Pair this sandwich with potatoes or fried yucca for a complete meal.

Ingredients

To prepare the mojo:

  • 5 garlic cloves
  • 1/2 cup bitter orange juice
  • 2 tablespoons lemon juice
  • 1 tablespoon oregano
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

To prepare the pork loin:

  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • 3 garlic cloves, chopped
  • 1 white onion, finely chopped
  • 3 tablespoons thyme
  • 2 tablespoons mustard
  • 1 (12 oz) bottle of beer
  • 2 lb wide pork loin
  • Bread, amount as desired
  • Mayonnaise or mustard, to taste
  • Cheese slices, to taste

Directions

    To prepare the mojo: Process all the ingredients. Once processed, add the olive oil little by little until thoroughly blended.

    To prepare the pork loin: Preheat the oven to 350°F.
  • 3
    In a container, mix all the ingredients, minus the pork, for the marinade. Coat the pork in this marinade and let rest for 45 minutes.

    Set the pork on a baking sheet with half the marinade. Bake for 35-40 minutes. 15 minutes before removing it, add remaining marinade.

    Remove the pork from the baking sheet and thinly slice. Slice open the rolls and spread with the mayonnaise or mustard, to taste. Stuff with cheese, various slices of pork and add mojo, to taste.

    Serve and enjoy!
